What is HACCP and how does it affect you?

HACCP (Hazard Analysis and Critical Control Point) is used to describe an internationally recognised way of managing food safely and protecting consumers. It is a legal requirement of the EU food hygiene legislation that applies to all food operators (except farmers and growers).
